Ingredients:
1 BBQ chicken
250g bacon rashers
1 tin condensed cream of chicken soup
1 tin condensed cream of asparagus or celery soup
1 carton thickened cream
Juice of 1 lemon
3 sticks celery
1 bunch shallots
1 small tin sliced mushrooms
½ bunch fresh parsley
50g butter
5 slices stale bread
Method:
Take chicken flesh from BBQ chicken and roughly chop. Chop celery, onion, parsley and bacon. Fry bacon lightly. Place all ingredients into casserole dish, excepting bread and butter and mix well.
Cut crusts from bread and crumble into fry pan with melted butter. Fry lightly. Top casserole with fried bread crumbs.
Bake for approximately 40 minutes in moderate oven.
Serve with mashed potato or boiled rice.
