Ingredients:
4 cups thinly sliced potatoes
1 tablespoon flour
1 teaspoon salt
¼ teaspoon pepper
1 large onion thinly sliced
1 tablespoon butter
1 ½ cups milk or cream
2 rashers of bacon chopped and fried
1 large cooked chicken, chopped into large serving pieces
¼ teaspoon paprika
1 cup grated cheese
Method:
Grease a casserole and place a layer of sliced potatoes on the bottom. Combine the flour, salt and pepper and sprinkle 1/3 over the potatoes. Add layer of chicken and bacon.
Add another layer of the onion slices, dot butter and add another layer of potatoes, flour and onions, then another of the chicken and bacon pieces. Finish with another lay of the potatoes and seasoned flour.
Pour over the milk or cream. Sprinkle with cheese. Cover and place in a moderate oven for 1 ½ hours. Sprinkle with paprika before serving.
